Slow-Cooker Chicken Tacos | The Busy Abuelita

This shredded chicken filling is super easy to make, thanks to our slow cooker! The great thing is that you can combine everything, cover and set it on low, and go about your day. Then by the time dinner rolls around, you’ll have something tasty and flavorful to feed your family. Make a big batch and use the leftovers in other dishes!

What Ingredients do I need for Chicken Tacos?

Chicken: Breast halves or boneless skinless chicken thighs if you prefer are both great for tacos.

Vegetables: Onions and garlic. I use white onions but yellow works for this recipe.

Seasonings: Salt, Black Pepper, and taco seasonings. Here is a link to make a simple homemade taco seasoning

Liquids: Water and Olive oil. Vegetable or canola oil can also be used for this recipe.

Tortilla: Corn tortillas or flour tortillas (6-inch size)

Cooking Chicken in the slow cooker

  • Place chicken in the slow cooker with all ingredients.
  • When the chicken is done, remove the chicken from the slow cooker and allow it to cool for 20 minutes.
  • Leave liquids in the slow cooker.
  • With 2 forks, shred the chicken, then place it back in the slow cooker with seasoned liquids, and turn the settings to warm.

Warm corn tortillas in a microwave for 10 seconds, or in a cast-iron pan.

Take a couple of tablespoons of warm shredded chicken place it in a warm tortilla, and load it with your favorite toppings.
