Sopa de Fideo also referred to as Sopita de Fideo, it has been suggested that the dish may have originated in Spain. Fideo con Carne y Papas simply means vermicelli noodles with meat and potatoes.
Ingredients:
5 oz. box of fideo (vermicelli)
1 lb. stew meat or ground beef
1/2 cup chopped onion
1 large potato, peeled and cubed
1/2 tsp. garlic powder
1 cube beef bouillon
1 can 14.5 oz diced tomatoes
1 can 14.5 oz diced tomatoes
4 oz. tomato sauce
2 tbsp vegetable oil
Salt & pepper to taste

Directions:
- Add 1 tablespoon of oil to a skillet (not for ground beef). Brown stew meat or ground beef over medium to high heat.
- Add chopped onion over browned meat.
- Add peeled and cubed potato over the meat, and onions.
- Add one cube of beef bouillon to 2 cups of water. Bring to a boil in a microwave-safe dish in the microwave.
- Add 1 tablespoon of canola oil to a 2nd skillet. Add one 5 oz. box of fideo (vermicelli). Stir fideo over medium heat until golden brown.
- Pour browned fideo over meat mixture.
- Pour beef stock, canned tomatoes and tomato sauce over fideo and meat mixture. Bring the mixture to a boil, cover with a lid and let simmer on low for 10-15 minutes. The fideo will soak up some of the broth during this time. Fideo is ready when potatoes are tender.
- Serve your prepared Fideo con Carne y papas in a soup bowl.
Serve with avocado slices or bolillo roll. Garnish with green onions. Enjoy!
