Cilantro-Lime Mayonnaise

Cilantro-Lime Mayo is the perfect condiment for carne asada sandwiches, seafood, and burgers.

Serves 4

1 egg
2 tsp. prepared mustard
1/2 tsp. of salt
squeeze of lime juice
2 tbsp. chopped fresh cilantro
1/4 tsp. cayenne pepper 
1 1/2 cups olive oil or vegetable oil (or a combination)

  • Place the egg in the blender, add the mustard and salt, process for 30 seconds.
  • Add the lime juice, cilantro, and cayenne pepper and process briefly. With the motor still running, add the olive oil. 
  • The mixture will thicken after half the oil has been added, continue to add oil. Transfer to a bowl with cover, and let chill in the refrigerator for 30 minutes.
