Red Chile Posole is basically a cross between a soup and a stew and is popular around the country, especially on events such as New Year's Day and Christmas, and most people associate it with any large family gathering.
Types of Posole
There are three types of posole that rather appropriately mirror the colors of the Mexican flag – red, white, and green – and these all contain slight alterations to the base recipe.

White Posole - Hominy, meat, and broth are the main ingredients.

Meat - Traditionally pork is used for red chile posole, but beef and chicken can be used. Boneless Pork roast, chicken breast, or chuck roast
Vegetables - Onions, green chiles, garlic, and cilantro
Spices - Cumin, Mexican oregano, and salt
Oil - Vegetable oil, olive oil, or canola oil
Hominy - Mexican hominy is what you need for posole, and can be found in the ethnic aisle in the grocery store.

Making Red Chile Posole
Heat the oil in a skillet over high heat. Add meat and brown pork cubes on all sides for around 3 - 4 minutes.
In a 5 quart slow cooker, add the browned meat and all ingredients except cilantro.
Cook on High for 4 - 6 hours or until the pork is tender
Garnishes: Chopped cilantro, sliced radishes, thinly sliced cabbage, sliced avocados, or diced green onions
