Shrimp Ceviche

This classic Shrimp Ceviche recipe is easy to prepare and tastes delicious with chips or on top of  tostadas

Shrimp Ceviche

Ceviche is a popular dish in Latin America made by marinating fish or shellfish in citrus juice (or another acidic liquid).  The acid in the citrus literally cooks the fish and the result is a flavorful and refreshing dish.

This ceviche is very simple and fresh. The best part is that there is no cooking involved so it is perfect to make in the heat of summer.

Ingredients in Shrimp Ceviche

  • Shrimp -  Medium peeled, deveined shrimp
  • Vegetables - Plum tomatoes, jalapeños, white or red onions, avocados, cucumbers, green onions(optional), celery (optional), and chopped cilantro
  • Juice - Lime or lemon

Making Shrimp Ceviche
  • Place shrimp in a glass bowl and cover with lime juice to marinate for about 10 minutes, or until they turn pink.

  • Place the plum tomatoes, onion, diced cucumber, avocados, and jalapeños in a large (stainless steel, glass, or plastic) bowl.

  • Remove shrimp from lime juice, reserving juice. Dice shrimp and add to the bowl of vegetables.

  • Pour in the remaining lime juice marinade. Add cilantro and salt and pepper to taste. Toss gently to mix. Cover and chill for 2 hours.
