Corn tortillas are cut into quarters and lightly fried and placed in a chile mixture

The fried tortillas are simmered until the tortilla starts softening. Pulled chicken is sometimes added to the mix. It is commonly garnished with crema, crumbled queso fresco, raw onion rings, and avocado slices.

Chilaquiles is a traditional Mexican dish. Chilaquiles can be served with refried beans, eggs (scrambled or fried), meat, and guacamole as a side dish.

  • 3 tbsp Olive Oil
  • 1 large onion, minced
  • 2 tbsp minced garlic
  • 4 jalapeños, stemmed and seeded
  • 1 1/2 pounds tomatillos, husked and quartered
  • 1/2 bunch cilantro, coarsely chopped
  • 1 1/2 tsp. Kosher salt
  • 1/4 tsp. black pepper
  • 1 1/2 tsp. cumin
  • 3 c. vegetable or chicken broth
  • 12 corn tortillas
  • 1 cup shredded Monterey jack cheese
  • 1/4 cup Olive Oil for frying
  • Optional toppings: Guacamole, Mexican Crema, thinly sliced red onions

  1. In a large saucepan or stockpot, heat olive oil over medium heat
  2. Saute onions and garlic until tender and fragrant.
  3. While onions are sauteing, combine tomatillos, jalapeno peppers, and cilantro in your blender.
  4. Process until smooth; you may have to do it in batches and/or add some broth to make things blendable
  5. Pour the tomatillo mixture over the onions and garlic and add broth, salt, pepper, and cumin
  6. Simmer 15 minutes to 1 hour, depending on the consistency you want.
  7. Quarter corn tortillas and fry in olive oil in small bunches. Remove fried tortilla chips from oil and place them on paper towels.
  8. Place tortilla chips in a large casserole dish and pour Salsa verde sauce over chips. Top with cheese and place in preheated oven 350°F for 15 minutes.
  9. Serve with rice and beans, or eggs on the side for breakfast.

Quickie Chilaquiles Verdes

  • 1 dozen corn tortillas -Homemade Baked Tortilla Chips or store-bought tortilla chips lightly salted
  • 1 cup green enchilada sauce
  • 1 cup tomatillo salsa sauce
  • 1 cup Monterey Cheese, shredded
Preheat oven 350°F
  1. Place tortilla chips into a casserole dish. Mix sauces together, and pour over tortilla chips. 
  2. Sprinkle cheese on top, and place in the oven for 20 to 30 minutes. Top with your favorite toppings... Mexican crema, avocado slices, etc.
