Chilaquiles Verdes




Easy Chilaquiles Verdes is a traditional Mexican dish, served with refried beans, eggs (scrambled or fried), meat, and guacamole as a side dish.

Chilaquiles is a Mexican classic. Chilaquiles are traditionally a brunch or breakfast dish made with leftover tortillas and salsa. A good plate of Chilaquiles is one in which the crunchy tortillas preserve some of their crunchy texture and the sauce is thick enough to cover the tortillas without weighing them down.

 






For This Recipe You Will Need:
  • Cooking Oil: Olive oil, or vegetable oil 
  • Vegetables: Garlic, white onions, tomatillos, jalepeños
  • Herbs: Cilantro
  • Spices: Salt, black pepper, and ground cumin
  • Tortillas: White corn tortillas work best for Chilaquiles, the right thickness
  • Broth: Chicken or vegetable broth (for a vegetarian meal)
  • Cheese: Monterey Jack cheese, Quesadilla cheese, or Mexican blend cheese all work for this recipe.






How to Make Chilaquiles Verdes:
  • In a large saucepan or stockpot, heat olive oil over medium heat
  • Add onions and garlic, and saute until tender and fragrant.
  • While onions are sauteing, combine quartered tomatillos, jalapeno peppers, and cilantro in your blender or food processor
  • Process until smooth; you may have to do it in batches and/or add some broth to make things blendable. The tomatillo sauce should look like the picture below.

Chilaquiles Verdes

  • Pour the tomatillo mixture over the onions and garlic and add broth, salt, pepper, and cumin
  • Simmer for 15 minutes to 1 hour, depending on the consistency you want.
  • Quarter or cut into wedges the corn tortillas and fry in olive oil in small bunches. Remove fried tortilla chips from the oil and place them on paper towels.

Chilaquiles Verdes


  • Place tortilla chips in a large casserole dish and pour Salsa verde sauce over the chips. Top with cheese and place in preheated oven at 350°F for 15 minutes.
  • Serve with rice and beans, or eggs on the side for breakfast.







Red Chile Chilaquiles:
  • Red Chile Chilaquiles - Homemade Red chile sauce or a store-bought can of red chile sauce will replace the Tomatillo Verde mixture.  Just skip the first steps in this recipe, pour red chile sauce on fried tortilla chips, top with cheese, and place in the oven for 15 minutes. Top with crumbled Queso Fresco, diced onions, or spicy pickled red onions
