Easy Shrimp Tostadas

         This healthy Shrimp Tostada starts with a baked tostada shell and layered with beans, cheese, onions, grilled shrimp and ends with tomatillo salsa verde to create a delicious easy dish.

Servings: 6 - 8
2 cups refried beans ( can or homemade)
2 lbs. medium-size shrimp, peeled and deveined
1 cup Tomatillo Salsa Verde (homemade recommended or store-bought)
1 cup shredded cheese
1/2 cup onion, diced
Garlic salt
Tostada Shells (Baked Homemade shells or store-bought)

  • Season shrimp lightly with garlic salt. Grill shrimp on skewers on outdoor BBQ, or indoor grill for 1-2 minutes on each side.
  • Spoon warm refried beans on Tostada shell, spread beans evenly on the shell. 
  • Next, sprinkle cheese on top of beans, then diced onions, shrimp, and tomatillo salsa. 
  • Next place each shell on a foiled lined baking sheet. Place in preheated oven 350°F for 2 minutes, just so the cheese can melt. Remove each shell with spatula, and place on serving plate. Serve with rice and beans.
Optional toppings: Crumbled cotija cheese, guacamole, avocado slices.
