Classic Mexican Stew made with brown lentils, potatoes, carrots, and spicy Chorizo.

Ingredients:
2 cups brown lentils
9 oz. Spanish Chorizo, sliced
1 tbsp. minced garlic
1 large potato, peeled and diced
1 small onion, diced
1 tbsp. smoked paprika
3 carrots, diced
1 4 oz. can dice green chiles
Salt
Rinse lentils. Place lentils, chorizo, whole garlic cloves, green chiles, carrots & potatoes in a large pot. Fill a pot with water until ingredients are submerged by two inches.
Bring to a boil, then lower to a simmer. Let cook
uncovered, stirring occasionally.
Sauté onions in a pan with olive oil until slightly browned, then add paprika. Add onions to the pot of lentils. Cook for 45 minutes.
Return to the pot. Salt to taste.
