Lentils with Chorizo (Lentejas con Chorizo)

Classic Mexican Stew made with brown lentils, potatoes, carrots, and spicy Chorizo. If you want to bring in prosperity and good fortune with the food you eat on New Year's Eve, lentils are a good choice. Many households in Mexico serve lentils as part of their New Year's Eve dinner, as they're thought to represent abundance.

Classic Mexican Stew made with brown lentils, potatoes, carrots, and spicy Chorizo.

  • 2 cups brown lentils
  • 9 oz. Spanish chorizo
  • 1 teaspoon minced garlic
  • 1 large potato, peeled and diced
  • 3 carrots, sliced
  • 4 oz. can dice green chiles
  • 1 small onion, diced
  • 1 tablespoon smoked paprika
  • Salt to taste
  1. Rinse lentils. Place lentils, chorizo, minced garlic, green chiles, carrots & potatoes in a large pot. Fill a pot with water until ingredients are submerged by two inches.
  2. Bring to a boil, then lower to a simmer. Let cook uncovered, stirring occasionally. Cook for about 45 minutes.
  3. Sauté onions in a pan with olive oil until slightly browned, then add paprika. Add onions to the pot of lentils. Salt to taste.
