Margarita Cupcake

 Deliciously moist cupcakes topped with lime-flavored cream cheese frosting, perfect for your next party

1 box Cake mix Super Moist lemon cake
1/2 cup water
1/2 cup vegetable oil
1/2 cup tequila, or water
1 tsp. grated lime peel
3 eggs
1 box lime-flavored gelatin (4 serving)

1 (8oz) package cream cheese, softened
1/2 cup unsalted butter, softened
1 tbsp grated lemon peel
1 tbsp lime juice
5 cups confectioners' sugar

Heat oven to 350 degrees F . Place cupcake liners in a muffin pan (24 liners).

In a large bowl, beat all cupcake ingredients with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.

Bake 18 to 22 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes; remove cupcakes from pans to a cooling rack. Cool completely.

Beat the cream cheese and butter together until light and fluffy, and stir in the lemon peel and 1 tablespoon of lime juice. Beat in the confectioners' sugar, 1 cup at a time, scraping the sides of the bowl thoroughly with a spatula after each addition. Frost cupcakes and sprinkle lime zest on top of the cupcakes. Decorate with lime wedges.
