Papas con Chorizo ( Potatoes with Chorizo)

 These crispy potatoes are infused with the Mexican flavors of chorizo sausage. Breakfast, lunch or dinner meals can be created from these flavorful potatoes.


Servings: 4-6
Potatoes with Chorizo 

7 red potatoes, diced into 1/2 inch cubes
1 small onion, diced
1 tbsp minced garlic
1 9 oz. Mexican Pork chorizo, remove the casing (Soy Chorizo for Vegetarian)
1 tbsp. olive oil
Salt & Pepper to taste
1 serrano pepper, seeded and sliced (optional)

 Mexican chorizo is a fresh and spicy grounded raw pork sausage made by combining ground pork, dried red chilies, spices, and vinegar. It can be made either without casing or with an artificial casing. Mexican chorizo is also made using beef.


 Spanish chorizo is a cured, dry and/or smoked pork sausage which is flavored with dried smoked red chilies or smoked paprika

  1. Heat the oil in a heavy large skillet over medium-high heat. Add potatoes, cook until potatoes are tender. 

  2. Add the chorizo to another skillet and cook, breaking up the clumps, until dry and crisp, about 10 minutes. Using a slotted spoon, transfer the chorizo to a paper-lined plate to absorb any additional oil.
  4. Pour off all but 1 tablespoon of fat from the chorizo pan and heat the pan over medium-high heat. 

  5. Add the onions, minced garlic, and pan-fried potatoes and saute for a few minutes. Stir in the cooked chorizo and season with just a little salt and pepper, to taste. 

Sprinkle sliced serranos, avocado slices

Breakfast: serve with eggs and refried beans on the side
or make a big potato & chorizo burrito. Yum!!

Lunch: Serve as street tacos.

Dinner: Potato & Chorizo taquitos with rice and beans.
