Papas con Chorizo ( Potatoes with Chorizo)




These crispy potatoes are infused with the Mexican flavors of chorizo sausage. Breakfast, lunch, or dinner meals can be created from these flavorful potatoes.



This is Mexican comfort food at its finest – easy, fast, rich, and spicy. Throw in a tortilla or some eggs, maybe some cheese or beans, and you have breakfast, lunch, or dinner.



What is Mexican Chorizo?

Mexican chorizo is a fresh and spicy grounded raw pork sausage made by 
combining ground pork or beef, dried red chilies, spices, and vinegar. 
It's believed that chorizo as a whole has been around since Roman times, but Mexican chorizo was adopted a little later on when it was adopted by Mexico from Spain. Today, it is very popular throughout Mexico and even in some areas across the United States.

How to make Potatoes and Chorizo

Start with the potatoes, red potatoes don't need to be peeled but peel russet potatoes.
  • Heat the oil in a heavy large skillet over medium-high heat. Add diced potatoes, cook until potatoes are tender. 
  • Add the chorizo to another skillet and cook, breaking up the clumps, until dry and crisp, about 10 minutes. Using a slotted spoon, transfer the chorizo to a paper-lined plate to absorb any additional oil.




  • Pour off all but 1 tablespoon of fat from the chorizo pan and heat the pan over medium-high heat. 
  • Add the onions, minced garlic, and pan-fried potatoes, and saute for a few minutes. Stir in the cooked chorizo and season with just a little salt and pepper, to taste.








What to Serve with Potatoes and Chorizo

Potatoes and Chorizo with refried beans and warm flour tortillas.

Potatoes and Chorizo Tacos with a side dish of Mexican rice.

Potatoes and Chorizo Burritos

Optional:
Sprinkle sliced serranos, avocado slices

Breakfast: serve with eggs and refried beans on the side
or make a big potato, egg, and chorizo burrito. Yum!!

  • 7 red potatoes, or Russet potatoes, peeled and diced
  • 1 small sweet onion, diced
  • 1 tbsp garlic, minced
  • 9 ounces Mexican Chorizo, Soy Chorizo, or homemade Chorizo
  • 1 tbsp olive oil
  • Salt and pepper to taste
Instructions:
  1. Heat the oil in a heavy large skillet over medium-high heat. Add potatoes, cook until potatoes are tender.
