What is Mexican Chorizo?
Mexican chorizo is a fresh and spicy grounded raw pork sausage made by combining ground pork or beef, dried red chilies, spices, and vinegar.
It's believed that chorizo as a whole has been around since Roman times, but Mexican chorizo was adopted a little later on when it was adopted by Mexico from Spain. Today, it is very popular throughout Mexico and even in some areas across the United States.
How to make Potatoes and Chorizo
Start with the potatoes, red potatoes don't need to be peeled but peel russet potatoes.
- Heat the oil in a heavy large skillet over medium-high heat. Add diced potatoes, and cook until potatoes are tender.
- Add the chorizo to another skillet and cook, breaking up the clumps, until dry and crisp, about 10 minutes. Using a slotted spoon, transfer the chorizo to a paper-lined plate to absorb any additional oil.
- Pour off all but 1 tablespoon of fat from the chorizo pan and heat the pan over medium-high heat.
- Add the onions, minced garlic, and pan-fried potatoes, and saute for a few minutes. Stir in the cooked chorizo and season with just a little salt and pepper, to taste.
