Chorizo, Potatoes & Egg Recipe


Authentic Mexican Breakfast in less than 20 minutes. Savory Chorizo, with onions, potatoes, and scrambled eggs, add refried beans and a tortilla to complete this classic breakfast.

What is Chorizo made of?

Mexican chorizo is typically made with ground pork but you can also use ground beef, highly seasoned with spices, chiles, and vinegar.







Easy to make a Breakfast dish 
  • Start with cooking chorizo in a separate skillet, approx 8 minutes on medium-high heat.
  • In a separate skillet cook onions until translucent, then add potatoes and cook until potatoes are done. Add cooked chorizo, stir and cook for 2 minutes together on medium heat

  • Potatoes and Chorizo

  • Add beaten eggs and garlic powder. Let eggs set before stirring, cook eggs until done.









  • Ways to use Chorizo: 

    Burrito - Chorizo, Egg and Potato Burrito is a great breakfast choice, add salsa for spice 
    Taco - Chorizo & potato taco, topped with cheese and Mexican crema 
    Tostadas - Tostada shell with a layer of refried beans, topped with Chorizo & potato

    Chorizo, Egg and Potatoes Recipe


    Authentic Mexican Breakfast in less than 20 minutes. Savory Chorizo, with onions, potatoes, and scrambled eggs, add refried beans and a tortilla to complete this classic breakfast

    Ingredients:
    • 5 eggs, beaten
    • 1/4 cup diced onions
    • 4 oz. chorizo
    • pinch of garlic powder
    • Salt & Pepper to taste
    • 1 tbsp olive oil
    Instructions:

    1. Saute onions in oil on medium-high heat until translucent. Add potatoes to onions.
    2. Cook chorizo in a separate skillet until cooked, approx 8 minutes. Add chorizo to onion potato mixture, stir and cook for 2 minutes. Add beaten eggs and garlic powder.
    3. Let eggs set on medium heat before stirring, cook eggs until done.
    4. Serve with a tortilla, or make into a burrito.
    5. Optional: sliced avocados, queso fresco
