Mexican cucumber salad called Ensalada de Pepino in Spanish is a cool light refreshing side dish. This easy salad is made with sliced cucumbers & juicy tomatoes and enhanced with slivers of red onion and a tangy vinaigrette dressing, topped with Cotija cheese. Perfect for a casual dinner or feeding a crowd at a potluck party.
What's in Mexican Cucumber Tomato Salad
Cucumbers - I prefer to peel my cucumbers unless I use English cucumbers
Tomatoes - Plum tomatoes or cherry tomatoes (cut in half) are what I use but any type of tomato works.
Onions - Red onions or white onion, diced or sliced
Cilantro - Fresh and diced
Cotija cheese - Queso fresco can be used also
Vinaigrette Dressing
Red Wine Vinegar - Red wine vinegar can be substituted by white wine vinegar or balsamic vinegar.
Olive Oil - Vegetable oil or sunflower oil can substitute for olive oil
Mexican Oregano - Marjoram is a great substitute if Mexican oregano is not available.
Crushed Red Peppers - Commonly made from crushing dried cayenne peppers.
Salt and Pepper
Putting the Cucumber Tomato Salad together
In a medium bowl, add the tomatoes, cucumbers, cilantro, and onions and toss.
In a measuring cup or in a bowl, stir together the olive oil, red wine vinegar, garlic powder, Mexican oregano, crushed red peppers, salt, and pepper.
Pour the vinaigrette over the cucumbers, tomatoes, cilantro, and onions, and let marinate. Allow this salad to sit for as long as an hour for the flavors to blend.
