- 2 cups red cabbage, finely shredded
- 1 cup green cabbage, finely shredded
- 1/2 cup peeled and julienned carrots
- 2 green onions, thinly sliced (green parts only)
- 1/2 cup cilantro, roughly chopped
- 1-2 serrano chiles, stemmed and minced (optional)
- 1/4 cup radish, sliced (optional)
- 1/2 cup mayo
- 2 tablespoons fresh lime juice
- 2 teaspoons apple cider vinegar
- 1/2 teaspoons sea salt or kosher
- 2 teaspoons sugar
- 1/4 teaspoon ground cumin
Instructions:
- In a small bowl, whisk together the mayo, lime juice, vinegar, cumin, salt, and sugar until well combined
- In a bowl, combine the red and green cabbage, carrot, green onions, cilantro, and serrano chiles.
- Add the mayonnaise mixture and toss until thoroughly mixed. Cover and refrigerate until use.
