The bright color of the honey-chipotle pepper in adobo sauce marinade transfers to the chicken, lending a spectacular redness to chicken. The meat has a lot of flavors and works well in tacos, fajitas, quesadillas, or on top of salads.







For This Recipe You Will Need:

Peppers: fewer Chipotles in Adobo Sauce for less heat

Honey: dark corn syrup or 1/4 cup dark brown sugar

Garlic: minced

Salt: sea salt or kosher salt

Olive Oil: Canola oil or vegetable oil can replace olive oil

Chicken: Boneless thighs, breast, or chicken tenderloins

  • Place all ingredients into the blender or small food processor and puree for a few moments. Pour the marinade over the chicken in an airtight container or large ziplock bag and shake to coat each of the pieces.
  • Marinate for 4 hours to overnight in the refrigerator.
  • Grill chicken or oven bake till the internal temperature of 165 degrees
Let it rest 5-10 mins before serving. Serve with your favorite side, or cut into bite-size pieces for tacos, burritos, or rice bowls
