Huevos Rancheros




Huevos rancheros are fried eggs served on a corn tortilla smothered with beans, and warm salsa. Quick and easy to make! Huevos rancheros (meaning “ranch-style eggs”) is a typical Mexican breakfast.

It’s hearty, filling, and easy to prepare. Huevos Rancheros is a breakfast staple both in Mexico and the United States. There are many interesting regional versions of this dish. In New Mexico the tortillas are blue, in Oaxaca, they serve fried bananas on top, and in Arizona, they eat huevos divorciados (separated eggs), where one egg receives a green salsa and the other egg a red one. In the Mexico City area, people love to spread refried beans between the tortilla and the eggs, it's my favorite way.





For This Recipe you will need:

  • Eggs: Large eggs
  • Corn Tortillas
  • Refried beans: store-bought or homemade
  • Salsa Ranchera: Store-bought, or homemade
  • Optional: Avocado slices, jalapeño slices





  • Making Huevos Rancheros

  • Heat up refried beans and set aside

  • Heat 1 tbsp. oil in a 12″ nonstick skillet over medium-high heat, add corn tortillas and fry for 5 seconds on each side.

  • For each corn tortilla, place 2 tablespoons of warm beans and spread, then spread some warm salsa ranchera.

  • Then add a fried egg on top of the salsa, and season with salt and pepper. That's it...simple to make, and delicious.

  • Huevos Rancheros

    Huevos Rancheros can be served with beans on the side, and with your favorite toppings. Serve immediately, and enjoy!
