Cilantro Lime Rice





Cilantro Lime Rice is very simple to make and makes a great filling side dish to any Mexican meal. A stir-in of cilantro and lime juice transforms plain cooked rice into a lively side.

The best part about this recipe is that it’s simple to make, and uses just a few staple ingredients. Cilantro Lime Rice can be used as a filler for homemade tacos or burritos or you can add it to soups. Down-to-earth ingredients come together to form such a delicious and clean flavor.

Ingredients
Here's a list of what you need to make Cilantro Lime Rice
  • Olive oil
  • Basmati rice or long grain rice
  • Cilantro
  • Lime juice and zest
  • Chicken broth
  • Sea Salt
  • Minced Garlic
  • Jalapeño

How To Make Cilantro Lime Rice

  • Heat the olive oil in a medium saucepan on medium-high heat. Add the raw rice and stir to coat with the olive oil. Cook, stirring occasionally until the rice has started to brown. Add the garlic and cook a minute more.

  • Add broth, salt, and lime zest to the rice. Bring to a rolling boil, then cover and lower the heat to low to maintain a very low simmer.

  • Cook undisturbed for 15 minutes, then remove from heat and let sit for 10 minutes. Fluff the rice with a fork.

  • Transfer the rice to a serving bowl. Pour lime juice over the rice and toss with chopped cilantro and diced jalapeño(optional).

    • 2 tablespoons olive oil
    • 1 1/2 cup long-grain rice or Basmati Rice
    • 1 clove of garlic, minced
    • zest of one lime
    • 3 tablespoon lime juice
    • 1/4 teaspoon sea salt
    • 2 1/4 cup low sodium chicken broth
    • 1 tablespoon jalapeño, seeded and diced(optional)
    • 1/2 cup cilantro, chopped, leaves only
    Instructions:
