5 ingredients for Baked Chicken Taquitos  filling

  • Rotisserie Chicken or Homemade baked chicken, shredded. Leftover shredded turkey can be used.
  • Diced Onions
  • Mexican blend cheese, or cream cheese if you prefer
  • Garlic Powder for quick & easy, but you can use 1 tsp. minced garlic
  • Corn tortillas

Easy to make Baked Chicken Taquitos

Quick and easy with only 5 ingredients for your filling, corn tortillas, and 30 minutes, voila!

Brush corn tortillas with slightly warm cooking oil, then fill with chicken mixture. Carefully* roll corn tortilla with filling and place toothpick to hold together.

*Warm corn tortillas slightly if tortillas tear while rolling. (microwave for 10 seconds)

Place rolled taquitos in the oven for 10-15 minutes at 425°F.

Freezing Taquitos

Taquitos are perfect for those busy weekday dinners, or game night! If you're feeling up for it, make a double batch, and then you'll have lots of freezer snacks for the future.

To freeze: Place cooled baked taquitos on a parchment-lined cookie sheet without touching. Then place the cookie sheet in the freezer. When taquitos are frozen remove them from the cookie sheet and add them all to a freezer-safe gallon-sized bag.

To reheat: Place taquitos in the oven for 10 minutes at 375°F, checking every few minutes until they’re warmed through.

Roasting Poblanos and Serrano peppers:

Set them onto a baking sheet, and bake them at 350° F  for 20-30 minutes, or until the skins char and bubble. Poblanos and serrano peppers can also be cut in half, remove the seeds, and placed in the oven to roast.

    Place chile peppers into the blender, add remaining ingredients in blender or food processor

      Blend for 2 minutes, or until well blended and creamy

      This chunky avocado salsa recipe is a great meat-free alternative. It’s sure to please vegetarians and meat lovers alike. This salsa is super easy to make where you just need to dice some avocados, jalapenos, tomatoes, and onions, hit it with some lime juice, throw in some cilantro, and finish things off with a touch of salt.

      How to Make Chunky Avocado Salsa 

      Avocado: Scoop out the avocado, gently work a spoon between the flesh and the skin of the avocado. Following the curve of the avocado with the bowl of the spoon, scoop avocado out of the shell, then cut into chunks.

      Tomatoes: Cut tomato in half and scoop out seeds, then dice.  Getting rid of the pulpy seeds in your tomatoes can seem like a lot of extra work, but it's worth it. ... If you didn't remove the seeds, they will make the salsa extra watery.

      Onions: White or Red onions diced
      Cilantro: Fresh and chopped
      Jalapeños: 2 jalapeños is used for this recipe but you can use 1 for less heat. Seed, scrape membrane from jalapenos, and dice.
      Add garlic powder, lime juice, and salt to taste.

      Combine all ingredients in a bowl and gently toss to together with a fork.

      Chunky Avocado Salsa

      This chunky avocado salsa comes together in minutes, it’s perfect for a last-minute appetizer with chips, or on a Carne Asada Burrito.

      • 4 avocados, peeled, seeded, and chopped
      • 5 Roma(plum) tomatoes, seeded and diced
      • 2 jalapeños, seeded and diced
      • 1/2 cup onions, finely chopped
      • 1/4 cup cilantro, chopped
      • 1/2 tsp garlic powder
      • 4 tablespoons lime juice
      • Salt to taste
      1. Combine all ingredients in a bowl and gently toss to together with a fork.

      Mango Margarita with Chamoy is a spiced frozen mango margarita, layered with Chamoy sauce and is my favorite drink to order whenever we go to a Mexican restaurant.

      Chamoy imade with fruit, such as apricot, mango or plum, chilies, and lime juice, and is bottled and sold in varying degrees of spiciness. 

      Layer a couple of tablespoons of chamoy as you pour the mango margarita into a chile rimmed glass.

      Mango Margarita
      Serves 2  
      • 1/4 cup lime juice
      • 1/2 cup tequila, ( best quality creates a quality drink)
      • 1-ounce triple sec
      • 2/3 cup mango nectar
      • 3/4 cup frozen mangoes
      • 2 ounces sour mix
      • Ice cubes
      • Rim Glasses with sugar or ( Chile seasoning can be substituted, Tajin® powder is best) Note*
      • Lime wedges and slices
      • 2 tbsps. Chamoy (optional)
      • Rim margarita glasses with sugar  or Tajin( or whatever you prefer)
      • Blend all ingredients in a blender or food processor.
      • Pour into glasses. Squeeze juice from 1 lime quarter into each drink and garnish the glass with a lime slice.
      *Note: Chile seasoning and chile powder are not the same.  Tajin and Valentina chile seasonings are more of a salt seasoning with lime. 


      Pico de Gallo is a delicious combination of chopped tomato, onion, cilantro, fresh serranos, salt, and lime juice, great as a party appetizer, snack with chips, or pile it on your favorite enchiladas, nachos, tacos, and more!
