Spicy Poblano Cream sauce is the perfect summertime condiment. This sauce imparts a delectable spicy creamy flavor to enhance anything that comes off the BBQ grill.  Poblano cream sauce can be made a few days before any weekend grilling, it will last in the refrigerator up to 2 weeks.

Roasting Poblanos and Serrano peppers:

Set them onto a baking sheet, and bake them at 350° F  for 20-30 minutes, or until the skins char and bubble. Poblanos and serrano peppers can also be cut in half, remove the seeds, and placed in the oven to roast.

    Place chile peppers into the blender, add remaining ingredients in blender or food processor

      Blend for 2 minutes, or until well blended and creamy

      This traditional Red Chile Sauce recipe can be used for smothered burritos, Enchiladas, Chile Colorado, and more!

      Homemade Red Chile Sauce
      Makes 2 cups


      Ingredients: 
      • 1/2 cup red chile powder
      • 2 tsp vegetable oil
      • 1 tsp onion powder
      • 1  tsp garlic powder
      • 1/4 tsp oregano
      • 1 tsp ground cumin
      • 2 tsp flour
      • 2 1/2 cups water
      • 1/2 tsp. salt

       Directions:
        
        • In a 2 quart saucepan, heat 2 tsp vegetable oil to medium heat.
        • Stir in the oregano, onion powder, garlic powder, cumin, and flour.
        • Stir for about 3-5 minutes until the mixture because a roux begins to bubble, and turns a light brown, then remove from heat.
        • In a separate bowl, mix chile powder & water until it is blended smoothly.
        • Combine the chile mixture and flour paste, stirring with a whisk to prevent any lumps.
        • Return the pan to medium heat & bring the sauce to a boiling point.
        • Stir constantly until bubbles form.

        • Once the sauce shows signs of boiling, reduce heat to a low simmer & cover for 2-3 minutes.
        • Be sure to stir thoroughly to catch any lumps that might begin to form.
        • Let the sauce cool, smooth & thicken.
        • Once cool, add salt to your liking.

        Homemade Taco Seasoning 
        Makes abt. 1/2 cup

        Ingredients: 
          
         2 tbsp chili powder
        2 tbsp ground cumin
        1 tbsp smoky paprika
        1 tsp cayenne pepper
        1 tsp cinnamon
        2 tbsp garlic powder
        1/2 tsp red pepper flakes
        1/2 tsp sea salt, fine
        1/2 tsp ground black pepper


         Directions:

        Mix all ingredients in a small bowl. Store in an airtight container
        Use 2 tablespoons of seasoning for every pound of meat, and 1/2 cup of water to incorporate the seasoning into the meat.

          Chunky Avocado Salsa
        Serves 4
        Ingredients: 
          
        4 avocados, peeled, seeded and chopped
        5 plum tomatoes, chopped
        2 jalapeno, seeded and finely chopped
        1/2 cup onion, finely chopped
        1/4 cup cilantro, chopped
        1/2 tsp. garlic powder
        4 tablespoons lime juice
        Salt to taste


        Directions:
        Combine all ingredients in a bowl and gently toss to together with a fork.

          Perfect salsa to complement steaks right off the grill, or on Fish Tacos. Easy to make, using only 5 ingredients, and 10 minutes, you have a delicious salsa.

          Serves 5
          Ingredients:
          1 can (20 oz.) Pineapple chunks (keep the juice from can)
          1 ripe mango, peeled and diced
          1 tbsp. cilantro, chopped
          2 tsp. brown sugar
          Juice of 1 lime
          2 tsp. tabasco sauce, or any hot sauce you prefer.
          1 large tomato, seeded and diced.
          Salt to taste.

          Directions:

          Mix pineapple chunks, juice, and diced mango into a nonmetallic bowl. 


          Add the chopped cilantro, brown sugar, lime juice, hot sauce, and tomato, then season to taste with salt and combine well. 

          Cover and let sit to chill in the refrigerator for at least 1/2 hour to allow the flavors to marry.

          Even though this is an “enchilada sauce recipe” and it goes great on enchiladas, don’t let the name fool you. With the garlic infused in the sauce, this is a convenient, great-tasting alternative to pour on top of shrimp tacos, chicken burritos, and tamales.




          How to Make Green Chile Enchilada Sauce

          Roast chile peppers, and, tomatillos in the oven at 450 degrees F. until tomatillos are soft. 

          In a large saucepan or stockpot, heat olive oil over medium heat. Saute onions and garlic until tender and fragrant. 

          While onions are sauteing, combine tomatillos, Anaheim peppers, poblano peppers, jalapeno peppers, and cilantro in your blender.
          Process until smooth; you may have to do it in batches and/or add some chicken broth to make things blendable.

          Pour the tomatillo mixture over the onions and garlic and add chicken broth, salt, pepper, and cumin.

          Simmer 15 minutes to 1/2 hour, depending on the consistency you want
          The sauce can also be simmered in a slow cooker on low all day.




          How to Serve Green Chile Enchilada Sauce

          Ingredients:
          • 3 Tbsp. extra-virgin olive oil
          • 1 large onion, minced
          • 5-6 cloves garlic, minced or pressed
          • 3 poblano peppers, stem and seeded
          • 2 Anaheim peppers, stem and seeded
          • 1-2 jalapenos, stem and seeded (optional)
          • 1 1/2 lb. tomatillos, husked and quartered or halved
          • 1/2 bunch cilantro, coarsely chopped
          • 1 1/2 tsp. Kosher salt or sea salt
          • 1/4 tsp. black pepper
          • 1 1/2 tsp. cumin
          • 3 cup  chicken broth
          Instructions:

          Chamoy is a variety of savory sauces and condiments in Mexican cuisine made from pickled fruit


           Chamoy may range from a liquid to a paste consistency, and typically its flavor is salty, sweet, sour, and spiced with chiles.

          Makes 1 cup

          Ingredients:

          1 cup apricot jam (plum jam can be used)
          1/4 cup lime juice
          2 tsp crushed red pepper (adjust to taste)
          1 tsp chile pepper, ancho (adjust to taste)
          1 tsp salt



          Directions:

          Mix all ingredients in the blender, blend until smooth. Store in a covered container in fridge, good up to 5 days.

          Tips:
          For a thinner consistency, add 3/4 cup of lime juice.
          For a spicier taste, add more crushed red peppers.
          For a sweeter taste, add more jam


          Great for mangonadas, shaved ice and as a fruit dip. Yummy!
